Daily Food Journal | Week 4 | A Nice Salmon Fillet

I purchased a large salmon fillet and cut it in half to cook (with the skin).  For the leftover fillet, I use the flashing method to reheat. Basically, you’re taking room temperature food and reheating at a high temperature for just a few minutes. A 425°-475° oven will reheat, while preventing additional cooking.

Wrap the salmon tightly in foil and check after about 8 minutes. It should take less than 12 minutes (depending on size) to reheat without drying out. I typically just season with lemon pepper.

I tried a homemade cranberry sauce this week. It was actually very good but, even without the sugar, it contained way too many carbohydrates. Now I’ve got a two bags of whole cranberries in the freezer. Maybe I’ll reach goal before they go bad.

I used a clam chowder recipe from Carolyn Ketchum’s The Everyday Ketogenic Kitchen. Initially, I felt the chowder wasn’t thick enough and the flavor was just so-so. The flavor actually improved, and even thickened some, after freezing and thawing. But I don’t think I’ll make it again. Thankfully, she’s got a ton of great recipes, both in her cookbooks and on her website, All Day I Dream About Food.

On the 20th, I had dinner at a friend’s house. I, of course, am doing keto and she is edging toward veganism. We’re both healing our various health issues. We talk about our respective diets and we don’t judge one another. We’re both just taking what we each think is the best approach. So I brought my own food and she had hers and we both enjoyed the wine!

The keto mason jar ice cream recipe found here is pretty basic. There are a ton of variations found all over the internet, but this is the first one I ever came across and I just stick with it, changing things up (flavors, added ingredients) as desired.

As you can see, I really like my BLTs; I ate a total of three this week!

I was still mostly eating OMAD (one meal a day), but incorporating ADF (alternate day fasting). I was also still having Splenda and cream or half & half in my coffee during my fasting period. (Update: I have since omitted the Splenda and cream on fasting days, and stick to black coffee.)
